Nutty cookies made from the pantry 7-26-10

End of the month using whats in the pantry. These were yummy!!! A bit more like a sweet nutty biscuit for dipping into coffee.

Dry Ingredients::
1-1/3 cups buttermilk baking mix had 1 cup
1/4 cup all-purpose flour used over 1/2 cup
1/2 cup white sugar 1/4 cup each white and brown sugar
1/4 cup chopped pecans had walnuts instead

Wet Ingredients::
1 egg
3 tablespoons water
3/4 teaspoon anise extract used 1/2 t each almond and vanilla extracts

Glaze Ingredients::
1/2 cup confectioners' sugar
2-1/2 teaspoons water
1/4 teaspoon anise extract used same combo vanilla and almond extracts
1 drop red food coloring didn't had/use

Directions::
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together buttermilk baking mix, flour, sugar, and nuts.
In another smaller bowl, whisk together eggs, anise extract, and water.
Pour liquid over the dry ingredients and stir until well combined. Dough should have a dry consistency like biscuit dough.
Roll dough into walnut sized balls and place on a cookie sheet.
Bake in the preheated oven for 12 to 15 minutes. Cookies should be a light golden brown. Remove to cool on a rack. When cool, paint with glaze.

For glaze:
Mix confectioners' sugar with anise extract and food coloring. Add water 1 tablespoon at a time. Stir until smooth. Water may be adjusted to give the glaze a creamy paint-like consistency. Paint the cookies with a pastry brush, or dip them in the glaze with a slotted spoon. Let the cookies dry on waxed paper or on cooling racks.
If you do not glaze the cookies, they will become rock-hard in texture.

Clara's Poormans meal - my way

This was so good!! I found the video of Clara Cannucciara on Dollar stretcher.com

My portions for my family of 4-2 of which are male tweenage eaters is::

2 pounds of potatoes chopped into small cubes(peeling optional)$1.00
1/2 onion chopped finely $.10
1T garlic chopped finely $.05
4 sliced hot dogs $.50
1/4 C spaghetti sauce $.25
1 cup water free
oil, pepper $.10

Directions::
use oil to cook the potatoes,pepper, onion and garlic about 10 minutes, add spaghetti sauce stir throughout, add sliced hot dogs cook 2 minutes then start adding the water so it creates a sauce and reduces. This should take about 25-30 minutes total.
This meal cost me about $2.00 to make to serve my family of 4.
I served honeydew alongside so $3.00 total cost and my guys loved it!!!

Bread to go with Hamburger Soup

This is the bread recipe I will use to make bread to go along with my Hamburger Soup tonight the notes in burgundy are for my variations on the bread to make it 1 1/2 lb loaf


Add Original Recipe Yield 1 - 1 pound loaf

Ingredients
2/3 cup warm water (110 degrees F/45 degrees C)
1 3/4 cups bread flour
probably use 2 cups flour
2 teaspoons dry milk powder
2 teaspoons white sugar
1 teaspoon salt
1 teaspoon pepper
1 tablespoon grated Parmesan cheese
will use at least 2 Tablespoons
1 1/2 teaspoons Italian seasoning
1 tsp chopped garlic
1T grated onion
1 1/2 tablespoons margarine
1 1/4 teaspoons active dry yeast
Directions
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.
Select the Medium Crust and Basic/White
I may also add in some grated cheddar cheese for a deeper flavor.

Hamburger Soup - my way this time

I am starting with this recipe I got off Allrecipes.com

Ingredients::my variation
1 1/2 pounds lean ground beef 3/4#
2 large potatoes, sliced cubed
2 stalks celery, sliced chopped
salt and pepper to taste easy on salt
2 onions, thinly sliced 1 chopped
1 (15 ounce) can peas corn
3 small carrots, sliced 2 chopped
1 (10.75 ounce) can condensed tomato soup
1 1/4 cups water 2 cups with 2T beef base

Directions::
Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
Place a the potatoes in a layer to cover the bottom of the slow cooker. Sprinkle the celery over the potatoes, and cover with a layer of ground beef. Season each layer with salt and pepper. Throw in the carrots, onions and peas. Mix together the tomato soup and water, and pour over the top. Cover, and set to low for 6 to 8 hours.
In my Rival 5 qt. probably more like 4-5 hours on low. Also make small loaf garlic herb parmesan bread in bread machine to go with.

Chicken Italiano - my way - the easy way

This is one of my creation meals this month, I hope they love it!!! How could they not you ask?? Cuz they're crazed!!

8 chicken patties (2 each)
4 slices each ham and american cheese cut in half to make 8 pieces
1/2 jar meatless hearty spaght sauce (mixed with 1/4 cup water?)
1/4 cup or more parm cheese

Top patty with ham then cheese cook in oven at 375 for about 10-15 minutes. take out to pour the sauce over it all, cook another 5 minutes take out and sprinkle parm cheese, cook another 5-10 minutes - serve over egg noodles with a green salad alongside.

Simple Salsa Chicken?

This is one of my families all time favorite meals. Simple Salsa Chicken. I make it to serve over rice or as what happened this week when it came out a bit dry we ate it as taco meat with a can of TB no fat re fried beans, some white rice, sliced tomato and lettuce, TB shells 12-$1, a dollop of sour cream and a sprinkle of shredded cheese. YUM-O!!

Well, anyway I got rave reviews tonight and I want to share my secret ingredient - a good teaspoon of Strawberry preserves mixed with the salsa. I usually add a 15 oz jar but today I added probably more like 11 oz from 2 jars (both less than half full in the fridge) LOL Cook in Crock- low for about 6 hours
