Nutty cookies made from the pantry 7-26-10

End of the month using whats in the pantry. These were yummy!!! A bit more like a sweet nutty biscuit for dipping into coffee.

Dry Ingredients::
1-1/3 cups buttermilk baking mix had 1 cup
1/4 cup all-purpose flour used over 1/2 cup
1/2 cup white sugar 1/4 cup each white and brown sugar
1/4 cup chopped pecans had walnuts instead

Wet Ingredients::
1 egg
3 tablespoons water
3/4 teaspoon anise extract used 1/2 t each almond and vanilla extracts

Glaze Ingredients::
1/2 cup confectioners' sugar
2-1/2 teaspoons water
1/4 teaspoon anise extract used same combo vanilla and almond extracts
1 drop red food coloring didn't had/use

Directions::
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together buttermilk baking mix, flour, sugar, and nuts.
In another smaller bowl, whisk together eggs, anise extract, and water.
Pour liquid over the dry ingredients and stir until well combined. Dough should have a dry consistency like biscuit dough.
Roll dough into walnut sized balls and place on a cookie sheet.
Bake in the preheated oven for 12 to 15 minutes. Cookies should be a light golden brown. Remove to cool on a rack. When cool, paint with glaze.

For glaze:
Mix confectioners' sugar with anise extract and food coloring. Add water 1 tablespoon at a time. Stir until smooth. Water may be adjusted to give the glaze a creamy paint-like consistency. Paint the cookies with a pastry brush, or dip them in the glaze with a slotted spoon. Let the cookies dry on waxed paper or on cooling racks.
If you do not glaze the cookies, they will become rock-hard in texture.

Clara's Poormans meal - my way

This was so good!! I found the video of Clara Cannucciara on Dollar stretcher.com

My portions for my family of 4-2 of which are male tweenage eaters is::

2 pounds of potatoes chopped into small cubes(peeling optional)$1.00
1/2 onion chopped finely $.10
1T garlic chopped finely $.05
4 sliced hot dogs $.50
1/4 C spaghetti sauce $.25
1 cup water free
oil, pepper $.10

Directions::
use oil to cook the potatoes,pepper, onion and garlic about 10 minutes, add spaghetti sauce stir throughout, add sliced hot dogs cook 2 minutes then start adding the water so it creates a sauce and reduces. This should take about 25-30 minutes total.
This meal cost me about $2.00 to make to serve my family of 4.
I served honeydew alongside so $3.00 total cost and my guys loved it!!!

Bread to go with Hamburger Soup

This is the bread recipe I will use to make bread to go along with my Hamburger Soup tonight the notes in burgundy are for my variations on the bread to make it 1 1/2 lb loaf


Add Original Recipe Yield 1 - 1 pound loaf

Ingredients
2/3 cup warm water (110 degrees F/45 degrees C)
1 3/4 cups bread flour
probably use 2 cups flour
2 teaspoons dry milk powder
2 teaspoons white sugar
1 teaspoon salt
1 teaspoon pepper
1 tablespoon grated Parmesan cheese
will use at least 2 Tablespoons
1 1/2 teaspoons Italian seasoning
1 tsp chopped garlic
1T grated onion
1 1/2 tablespoons margarine
1 1/4 teaspoons active dry yeast
Directions
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.
Select the Medium Crust and Basic/White
I may also add in some grated cheddar cheese for a deeper flavor.

Hamburger Soup - my way this time

I am starting with this recipe I got off Allrecipes.com

Ingredients::my variation
1 1/2 pounds lean ground beef 3/4#
2 large potatoes, sliced cubed
2 stalks celery, sliced chopped
salt and pepper to taste easy on salt
2 onions, thinly sliced 1 chopped
1 (15 ounce) can peas corn
3 small carrots, sliced 2 chopped
1 (10.75 ounce) can condensed tomato soup
1 1/4 cups water 2 cups with 2T beef base

Directions::
Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
Place a the potatoes in a layer to cover the bottom of the slow cooker. Sprinkle the celery over the potatoes, and cover with a layer of ground beef. Season each layer with salt and pepper. Throw in the carrots, onions and peas. Mix together the tomato soup and water, and pour over the top. Cover, and set to low for 6 to 8 hours.
In my Rival 5 qt. probably more like 4-5 hours on low. Also make small loaf garlic herb parmesan bread in bread machine to go with.

Chicken Italiano - my way - the easy way

This is one of my creation meals this month, I hope they love it!!! How could they not you ask?? Cuz they're crazed!!

8 chicken patties (2 each)
4 slices each ham and american cheese cut in half to make 8 pieces
1/2 jar meatless hearty spaght sauce (mixed with 1/4 cup water?)
1/4 cup or more parm cheese

Top patty with ham then cheese cook in oven at 375 for about 10-15 minutes. take out to pour the sauce over it all, cook another 5 minutes take out and sprinkle parm cheese, cook another 5-10 minutes - serve over egg noodles with a green salad alongside.

Simple Salsa Chicken?

This is one of my families all time favorite meals. Simple Salsa Chicken. I make it to serve over rice or as what happened this week when it came out a bit dry we ate it as taco meat with a can of TB no fat re fried beans, some white rice, sliced tomato and lettuce, TB shells 12-$1, a dollop of sour cream and a sprinkle of shredded cheese. YUM-O!!

Well, anyway I got rave reviews tonight and I want to share my secret ingredient - a good teaspoon of Strawberry preserves mixed with the salsa. I usually add a 15 oz jar but today I added probably more like 11 oz from 2 jars (both less than half full in the fridge) LOL Cook in Crock- low for about 6 hours

Cheater Chicken Pot Pie


Really, no cheat here it took time separating the refrigerator rolls but that's what I did!! I put seven split in half on the bottom and cooked for 15 minutes at 350 while I was boiling up 3 small frozen breasts with various personal preference seasonings in about 3 cups water (barely over chicken). When the beeper went off for the biscuits I also took out the chicken then adding into the water a chopped potato (1 large) cooked for about 7 minutes them added about 1 cup frozen mixed veggie, 1 package of chicken gravy-mix well, then add back in chopped chicken-add a bit of chicken bouillon seasoned cornstarch rue if it is too watery. Add meat, veggie, gravy mixture atop the precooked biscuit crust then separate 9 more biscuits and place on top of it all (I used the 25 cent can) baste them with 2T melted butter and cook for another 15 - 20 minutes at 350 until browned. Voila, dinner is done!!
BTW::Yes that is 16 biscuits - the other 4 will be for biscuits and gravy Thursday morning so they will not go to waste!!!

Stove-top scalloped potatoes

The ham I'm cooking is using the entire oven so I had to make the scalloped pots on the stove. Here is what I did
Cut 5 med pots into equal sized slices (maybe 10 each pot), cut 1/4 large onion into pieces,cut 1 carrot into small half slices, turn stovetop to med add 1T olive oil, add in 1T garlic then pots, keep browning, then carrots, then add S&P , 1/8C cornstarch, some nutmeg and whatever seasonings you prefer, if any, keep browning, add in 2 C milk (I used 1 C milk 1/2 C water 1/2 C evap milk) get to very low boil make sure on medium then let cook until 30 -45 minutes, add 1/2 C cheese if you want it I don't have any today) and let cook another 5-10 minutes let thicken while cooling then serve.
Tonight I'm serving with ham and green salad.
My neighbors were too generous and gave us a HUGE almost 12# ham (97 cents a pound at Safeway) for Easter. We will freeze a big portion of it for that event but there is enough for several meals as well.

My style oven fries

slice:: an onion, a dozen or so mini carrots~cut in half, rest of mushrooms in refer(6?)~sliced, set aside in small bowl
wash and cut:: 6 - 8 potatoes into 1/8 wedges, also set aside
combine in large bowl ::
1/4 C melted butter (marj)
2 T chopped garlic more or less
1/4 - 1/2 C EVOO
to taste:: Italian seasonings, pepper, paprika, garlic and onion powders, parsley, misc seasonings and herbs again to your preferred taste. I may do about 1/2 t each or ??
first:: add veggies into oil mixture, mix well,
next::add in potatoes, also mix well
then::add in 1/4 - 1/2 C parm cheese mix well into all ingredients
if still oily add in flour and small amount salt perhaps 1/4 C and 1/4t
place on large baking pan::bake uncovered 375 for 40 - 50 minutes

My ingredients quantity is variable depending on your preferred taste and quantity of veggies and potatoes (IE:: 6 or 8 potatoes) I am creating this to use up some veggies wasting away in the fridge. Plus, I have been wanting to try roasting veggies since I got this new to me oven. Instead, I am always making frozen pizzas and different kinds of cookies LOL
I will try to add a pic in when I make this recipe probably Sunday night with root beer crock pot ham. I am cooking in a crock pot bag but using it more like a baking bag

Hash Brown Casserole

This was a keeper. All liked it in my house. Tasted like a loaded baked potato.
Mix all this in a big bowl ::
1 can mushroom soup go with reduced sodium or whatever kinds here
1/2 can chicken soup
1/2 c sour cream of course, light
1/4 c milk fat free or??

added in::
garlic and onion powder, and pepper but you can add in your
personal seasonings but trust me NO SALT!!

fry on the side::
2 cups mushrooms chopped small
1/2 cup onions chopped small
2 T chopped garlic
after 5 - 10 min add to soups

then add in::
bag of hash (we used shredded)
also add in bacon I used about 3/4# baked in oven then chopped
add to all 1/2 cup grated cheese
I also added in 1/4 cup parm
mix then store in well greased pan in refer until ready to cook

When ready to bake::
cover and cook at least 30 min at 350
uncover add another 1/2 c cheese on top and cook another 30 min or more
until cheese on top is crispy!!
Remove from heat and let set for about 20 or so minutes then serve with green salad

Banana Bread for Bread machine

DRY STUFF
1/2 C oatmeal
1 1/2 C flour
1T cornstarch
1/2 t salt
1/4 C brown sugar
1/4 C white sugar
1/2t baking powder
1/2 t cloves
1/2 t cinnamon
1/2 t nutmeg
1/2 t baking soda
1/2 pkg yeast
WET STUFF
1/2 C milk
1/2 T molasses
1/2 T honey
2 eggs
3T softened butter
1/2 T vanilla extract
2 bananas slsices
1 chopped pear with juice

add wet ingredients into bread maker with fruit, add in dry ingredient, set to 2 pound loaf and use rapid cycle on maker. It smells yummy so far! It should be done in > 10 minutes

Super WM in Anderson or else maybe go to Vacaville?? boys need shoes!!

Land of Nod Cinnamon buns recipe

I so want to try these

Land of Nod Cinnamon Buns

20 unbaked frozen dinner rolls
1 cup brown sugar
1/4 cup instant vanilla pudding mix
2 tsp ground
3/4 cup raisins
1/3 cup butter, melted

Lightly grease a 10″ Bundt cake pan.Place frozen rolls into pan and sprinkle with brown sugar, pudding mix, ground cinnamon and raisins.Pour melted butter over rolls.Cover with a clean, damp cloth and leave overnight at room temperature.In the morning, preheat oven to 350*Bake rolls for 25 min, until golden brown.Turn rolls out onto a serving plate and serve warm.
Makes 10 servings.

Wed::hamburger patties, fries, applesauce had TB for >$10/4 plus a banana
Thu::French toast and bacon, smoothie made split pea in CP& own rolls
Fri::split pea soup and rolls salsa chicken tacos and the goodies
Sat::ham and potato casserole, fruit slices frozen pizza and lemon icees
Sun::IDK yet!! probably chx legs, mased, green beans

Here we go again. last week of the month menu ideas

Monday::spaghetti, green beans, bread Hubs made everybody ate, he's supposed to do the dishes too, we'll see when we get up in the morning LOL
Tuesday:: pasta e fagioli soup
chop up 1 onion, 3 garlic cloves, 1 celery, dozen little carrots in 1/6 pieces cook with 1/4# sausage portion in 2T EVOO cook then pour into CP, add tomatoe mixture(LO spaght sauce), prefered seasonings (S&P, italian,garlic and onion powder), add in about 4 cup water with 3 beef bouillion cube, cook 2 hours add can beans cook 1 more hour add noodles last 30 minutes. serve wtih green salad and garlic bread this smells so nice while cooking!!
Wednesday:: pancakes, sausage and mandarins had as planned
Thursday:: Au jus french dip sammys had 2# roast beef cooked all day in crock with 1/2 onion dozen little carrots, celery, seasonings, S&P,G&O powder, beef bouillion, 1 C water, served over instant mashed potatoes. Many compliments liked pots better this way.
Friday::pizza party?? or Sat?? Randy made tuna helper, and peas.
Saturday:: beans and rice or Fri?? Pizza delivered to house is the plan party at 6:30??
Sunday:: Pork Chop Soup depends on budget if $$ then will be shopping and FF or??

Another pantry cookie creation


1/3 cake mix
2T oil
1 egg
1/3 C finely chopped walnuts
10 orange candies chopped

Mix first 4 ingredients well, fold in candies, place in refer for 10 minutes then roll into balls or drop and put on a cookie sheet bake 350 10 minutes this portion made 20 cookies.

For this recipe I used what I had in my pantry, for instance we were out of canola or veg oil so I used part melted marj, and part olive oil, used a banana cake mix, We used very chopped nuts almost ground but I liked that texture in the batter. cutting the candies is sticky ha ha ha but I think worth it!!
For a whole cake mix triple these ingredients
All my guys liked them, well, except picky boy. however, I found a similar recipe using devils food and chocolate chips that I just simply have to try.

This is going to be Josh's good job going back to school and being successful meal.
slice hot dogs 2/3 way through, put in 2-1/4 slice american cheese wrap in crescent rolls cook for 15 minutes till crescents are done, put on plate then top with warmed chili (from can) serve with mixed fruit and/or green salad

  • Au Jus French Dip sammy,
  • pork steak, scalloped pots, greenie beanies
  • pancakes, sausage and mandarins

There should be toehr creations I can make but these come off the menu guide I made at the beginning of the month after we did the Shopping Olympics for january.

Results:: It was good!! Jacob prefered just the toast and the gravy, Josh the whole thing, me more gravy but whole thing, Randy wouldn't even try the big fat baby so he had to have a nasty sausage dog microwaved. I will increase flour and fat (marj and EVOO) to generous 1/4 cup each and 4 cups milk/water. This should make more than enough!! LOL

Monday night I am planning on a chicken stuffing casserole. thinking of doing basic stuffing mix, cooked 2 breasts (CP), bag of brocoli, and canned creamy chx soup mixed with1/2C broth,and heaping T of scour cream (opt) cook 350 in oven 20 mincovered then 10 min uncovered serve with bounty of sliced oranges we received from our tree this year - best so far in 5 years.
Results:: Went OK will make some changes next time such as use green beans not frozen veggies otherwise will try again in a few months around a $5.00 meal

Tuesday night is Josh's big back to school night so I have planned cresent wrapped cheese dogs topped with chili served with mixed fruit and/or green salad
Results::Went over well, kid favorite had green salad with cucumber but notomatoe. will also try again in a month or so under $5 meal total

Wednesday night may be some type of noodle soup IDK yet I know I have a pork piece I could use and a can or 2 of tomatoes so I'm searching for ideas on this one

Starting to prepare but chops are frozen solid together, so now changed menu to chicken tacos cuz we won't have lettuce or cheese next week anyway make chicken W/ salsa in CP start at 1:30 done b4 5 fry up some corn shells lettuce, tomato, and pineapple on side. Well, power out most of day so created chicken on gas stove top. 5/6 enjoyed. Picky boy well too bad for his picky taset buds LOL

Thursday I know we are taking Tamale Pie to our lawyer meeting. (have to feed him since had to cut payments) DH cooking - yippee!! this is his meal - only he can cook it right or so he says.

Friday is canned beans and white rice with canned pears. Expect as planned

Saturday is LO ham in scrambled eggs over toast-subject to change and sunday is always changed because we change our minds within this timline LOL
